Homemade Graham Crackers

My kids LOVE graham crackers.  Especially with chocolate hazelnut spread or peanut butter.  I buy the “healthier” version at the store, but it never crossed my mind that I could make my own until I ran across this recipe on Pinterest.  Oh my word, these are to die for!  Way more tasty than the store bought ones anyways, and so so simple to make. For a fun twist in honor of Valentine’s Day this month, I topped some with a smear of chocolate hazelnut spread and some fresh sliced strawberries.  What a treat!  We haven’t had any fresh strawberries at our house since late last summer; we have been working on the bags of frozen berries we stored when they were at their peak.  Having these berries made me even more excited for the “real thing” when local strawberries are in season again.  I can defintiely see us making these graham crackers throughout the year.  They will be perfect for homemade s’mores this summer!

Ingredients:

  • 2 1/2 cups white whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 cup cold unsalted butter cut into pieces
  • 1/4 cup honey
  • 1/4 cup water
  • 1 tsp real vanilla extract

How To:

Preheat oven to 350°F. In bowl of a food processor or mixer add all the dry ingredients and pulse a few times to combine. Next add the butter pieces and pulse/mix until broken into small pieces. Add the honey, water, and vanilla and pulse/mix until just combined. Divide dough into 2 halves.  Roll out each half between two sheets of wax paper to 1/4″ thickness. Cut rectangles, squares, or use cookie cutter for shapes, and repeat with second half of dough. Transfer to a silpat lined baking sheet (or 2), keeping some space between crackers. Bake for 15 minutes, cool, and enjoy!

Tips:

Store these in an airtight container and they will be good for about a week.  For a special treat top with chocolate hazelnut spread and sliced strawberries.
